A PDF carries more than its pages. Author names and internal usernames sit in the metadata. Annotations record who commented and when. Embedded files ride along invisibly. JavaScript can be present and executable. None of it appears when you read the document, and all of it travels when you send it.
Sanitising removes the lot in one pass: metadata, annotations and comments, embedded files and attachments, and any scripts. What remains is the visible page content and nothing else.
This is the step to run before publishing anything externally, and the step most organisations skip - which is why document metadata is a recurring source of accidental disclosure.

What exactly gets removed?
Document metadata, annotations and comments, embedded files and attachments, and any JavaScript. Page content is untouched.
Is this the same as redaction?
No. Sanitising removes hidden data outside the page content. Redaction removes specific visible content - use Find and Redact for that.
Will the document look different?
The pages will not. Comments and highlights disappear, since those are annotations.
How do I confirm it worked?
Run View Metadata on the result. The fields should be empty.
