The author field is the one that catches people out. It is populated automatically from the operating system account name, which means a PDF exported from a work laptop routinely carries a full name or an internal username - and nobody notices, because it never appears on a page.
This clears the document information: title, author, subject, keywords, creator and producer applications, and the creation and modification timestamps. What remains is the page content.
