Font problems in print are expensive and are always discovered late. A font is not embedded, or the print system has a different version of it, and the substituted typeface reflows the text - so the job comes back with a broken layout after the plates have been made.
Converting text to outlines eliminates the possibility. Each glyph becomes a vector shape, so there is no font to be missing or substituted. The page renders identically on every device and RIP, which is why print shops routinely ask for outlined files.
The cost is that the text stops being text. It cannot be searched, selected, copied or read by a screen reader. Outline for the print master and keep the original for everything else.

What do I lose?

Does the file get bigger?
Often yes. A vector path per glyph takes more space than a character referencing an embedded font.
Can it be reversed?
No. Once glyphs are shapes there is no character data to recover. Keep the original.
Is this the same as rasterising?
No. Outlining keeps everything as vectors at infinite resolution. Rasterising converts to pixels.
